The must is extracted from the drained and gently pressed grapes and, after cleaning, ferments slowly at around 15\u00baC. When there are about 20 grams of sugar left, fermentation is interrupted by cooling it to a temperature of 0\u00baC, and then microfiltering it to ensure its stabilisation. <\/p>\n<p><strong>Organoleptic characteristics<\/strong>: Pale straw yellow colour, transparent and bright. Intense, frank and clean aroma, with hints of flowers, tropical fruit and vanilla.
