Its vinification is carried out using the Ancestral method, characterised by a single fermentation, with ageing in the bottle on its fine lees for a minimum of 9 months.
This pre-phylloxera variety stems from the oldest legacy of the Canary Islands. Its grapes are grown ungrafted, adapted to different growing areas and altitudes on the island.
This is Bodegas Vega de Yuco’s latest venture to innovate, preserve and promote Lanzarote’s rich wine-making heritage.

Descripción
Colour
A sparkling wine with a cloudy, unfiltered appearance. Pale yellow in colour.
Nose
Good aromatic intensity, marked throughout by notes of fresh white fruit, such as apple or pear, against a broad background of lychee and ripe medlar. Very clean and fresh nose.
Palate
We enjoyed a sweet attack, with well-integrated acidity, smooth and pleasant, as well as fine, very pleasant bubbles that add a subtle volume.

Pairing
It is a perfect wine for all kinds of cold starters and tapas. It pairs very well with dishes such as prawn cocktails, carpaccios, pâtés, salads and sushi. It is also ideal with fish and seafood, such as tatakis, grilled octopus, oysters and even all kinds of vegetables, smoked foods and cheeses, right through to desserts.
