In the past, the vine spread throughout the south of the Iberian Peninsula and practically disappeared after the attacks of the phylloxera plague at the end of the 19th century, which affected practically all European vineyards. The Diego, like other varieties on the island, such as the Malvasía Volcánica, is pre-phylloxera and survives in Lanzarote thanks to the ingenuity and effort of the men and women of this land who knew how to preserve this natural wine heritage, unique in the world and of extraordinary value.

It is a pale yellow wine with golden reflections, clean and bright. On the nose it offers us floral aromas, interspersed with notes of nuts, due to its long aging on lees, with notes of aromatic herbs and spices. It denotes freshness and elegance. On the palate it is fresh, balanced, sparkling, creamy, long and long-lived, with a good release of carbon.
This sparkling wine goes perfectly with canapés, oysters, a good plate of ham, cheese, nuts and, in general, with any type of starter. Ideal to accompany and continue with fish, shellfish and rice dishes. It also pairs with meats, roasts, poultry and seasoned dishes and laborious culinary preparations. The perfect ally also for a good toast.
